The main sources of carbohydrates in Soylent are maltodextrin, oat flour, isomaltulose, potato starch and rice starch. Maltodextrin is a medium-long chain of glucose units composed of both 1->4 and 1->6 glycosidic bonds. Starches are long polysaccharide repeats consisting of amylose and amylopectin linked together by glycosidic bonds and are broken down slowly by the body, thus preventing a spike in blood sugar.
